Mike Baby and I made these tasty treats during our camping trip to the Pisgah National Forest in North Mills, NC. After the first bite, we both agreed they were perfect tailgating fare! The trick will be to prep them the night before so you're not handing raw bacon at the tailgate. Enjoy folks!
Ingredients: Extra large- jumbo shrimp uncooked bacon, cut into thirds- one third for each shrimp Toothpicks Your favorite BBQ sauce- I have a special place in my heart for the Budweiser brand BBQ sauces. Yumm. Wrap shrimp with bacon and secure with toothpick. Baste with BBQ sauce on each side and place directly on the grill (the bacon grease will keep them from sticking) these tasty treats need about 4 minutes per side. Best served up with Crystal's delicious grilled pineapple (dusted with cinnamon and sugar!) I have also tried these with honey mustard glaze instead of BBQ sauce and thought it to be tangy deliciousness.

Just some extra "tips" from the restauranteur. #1 - large skewers are always my favorite, as you can put three-to-four per skewer and turn easier and more evenly on a grill. #2 - if possible, par cook the bacon. Last is, lightly cook it before wrapping the shrimp as bacon cooks much more quickly than the shrimp. # 3 - I LOVE to add a tad of horseradish while wrapping for flavor purposes. Of course, this all depends on whether or not you like horseradish. You can also do the same thing with scallops if you like. We bacon-wrap our aspargus before grilling, too. No wonder, I'm getting fat.

We have to do this for one of the games, if it isnt too expensive for a group. It sounds amazing!

Im game for that if you are, Joe. These things sound amazing!Thanks for offering! Gabe will be tailgating with us off and on this year, but he won't be the "official" cook anymore due to his new accepted duties with the University. He won't have the time that he had last year to devote to it, so Mike and Tammy ill be the official 2009 cooks! Im sure they wont mind throwning these on the grill though, right Mike?

On behalf of my hubby and myself, Mike absolutely won't mind throwing these on the grill! We'd need a pile of them for the whole group though! Let us know by next Wednesday, because otherwise we were going to make ribs. Yummm.

I'll definitely buy a bring a slew ... make do a little of each, surf and turf style? I'll be 100 or so skewered up and ready to go on the grill. I'd like to try your bbq sauce if we can find it. I'll do 1/2 with horsey and 1/2 without. Cool? What time are you guys starting? and are we chillin in the same spot? Joe

Hi Joe! Mike and Rusty and I were talking about maybe doing the shrimp the following week since it's at 12:10 game and they cook up so fast- are you making it to next week's game? If not, bring on the skewers and we'll do some surf and turf! They're very Charleston-Southern anyway. :) Let us know by Wednesday because we'll be rib shopping then. Thanks!
